Leopard의 새 3D 독이 마음에 들지 않을 경우 예전 2D 독을 사용할 수가 있답니다.

3D -> 2D
$ defaults write com.apple.dock no-glass -boolean YES; killall Dock

복구도 간단합니다.

2D -> 3D
$ defaults write com.apple.dock no-glass -boolean NO; killall Dock

아직 Leopard가 없어서 직접 시험해 보진 못했지만 출처가 믿음직 해서 올립니다
